    Raw Fermented Criollo Cacao Beans from the state of Tabasco, Mexico. Grown naturally in the coastal plains of the state of Tabasco the village of Cunduacan its name originates from Mayan cum-ua-can which means "place of corn and serpents.
    Cocoa is subjected to the aerobic fermentation process,
    which consists of causing the death of the seed embryo at high
    temperatures for 6 days washed "Rojo Lavado" is fermented 3 days (depending on the temperatures) in wooden red cedar boxes, changing boxes every 24 hours when the embryo dies, the almond acquires flavors and aromas
    This process obtains a pronounced chocolate flavor but lower in coco butter.
    New harvest grown last year but picked and processed in the month of February 2021. Main ingredient in Chocolate making. Perfect for adding to smoothies. Used in baking. Also a staple in Mexican and Central American cuisine from Moles to Tejate to Tamales de Dulce.
